How to cook the perfect steak the Fussy way!
EASY TO FOLLOW INSTRUCTIONS

Step 1. Remove your steak from the fridge at least 1 hour before cooking so it can come to room temperature. If you miss this step you will get an overcooked outside and undercooked inside.

Step 2. You need seasoning salt, pepper steak rub, a good lug of oil on the steak and some serious heat.  Cooking in a heavy based pan or BBQ is best as long as you preheat till smoking point.

Step 3. Don't prod, poke or squash your steak, just let it do its thing.  For a 3 - 4cm thick steak cook the steak for 3 1/2 minutes on one side, twisting 90 degrees once.
Now flip and repeat giving you a medium rare steak.

Step 4. Always rest your steak, lightly covered in foil for half as long as you cooked it. For about 4 minutes.

Step 1. Speak to the Fussy crew to get some of our famous smokey BBQ pork ribs.

Step 2. Place Fussy Ribs in oven tray. Then half fill tray with “Cola” (you know the one) wrap with foil, put in a preheated 160 degree oven and cook for 1 hour and 30 minutes.

Step 3. Take out of the oven and baste with your favourite BBQ sauce.  Fussy crew can recommend a few.

Step 4. - These Ribs, straight out of the oven are perfect to chuck on the BBQ/Webber for a real nice finish.

How to cook the perfect roast the Fussy way!
EASY TO FOLLOW INSTRUCTIONS

Step 1. Always start with a piece of Fussy Roasting Beef.  Ask the Fussy crew for advice on the right cut to suit your requirements.

Step 2. Preheat the oven to 180 degrees.  Take beef out of the fridge to get to room temperature.

Step 3. Wash and chop veggies coarsely.  Keep it simple, no need to peel.  Just whack them in your heavy based roasting pan. Cut a whole bulb of garlic in half sideways.  Chuck that in with some fresh herbs, a drizzle of oil and season well.

Step 4. Drizzle Beef with oil and season with whatever you want  We like it simple - salt and pepper but feel free to add beef rubs. Place in the oven.

Step 5. Cook at 180 degrees for 1 hour for every kilo.

Step 6. About this time, crack on with roasting the spuds.  Boil large chunky potatoes in salted water, drain well, smear with duck/goose fat, season with a good salt, pop in the oven with the beef.

Step 7. Take beef out of the oven when cooked to an internal temperature of 55 degrees.

Step 8. ALWAYS rest your beef.

Step 9. Wrap in foil and rest for 10 minutes for every hour of cooking time.

Step 10. While beef is resting, crank up the oven to 220 degrees to finish off potatoes.

Step 11. TIP – Add pan juices to your Fussy gravy.

How to the perfect crackle pork the Fussy way!
EASY TO FOLLOW INSTRUCTIONS

Step 1. Always start with a Fussy Free Range and local WA Pork Roast with a little extra fat on. Ask one of the Fussy crew for extra scoring.

Step 2. Preheat your oven to 220 degrees.  Boil the kettle, place a rack in the sink and pour boiling water over the skin.

Step 3. Paper towel the pork till dry.  Salt HEAVILY and pack onto the skin.  Sit it in the fridge uncovered for 30 minutes. Remove from the fridge and wipe off excess salt.  Heavily massage butter/margarine into score marks.  Add a squeeze of lemon juice, if you like.

Step 4. Place pork into a hot oven at 220 degrees for 20 minutes or until skin crackles.  Then turn the oven down to 160 degrees for 1 hour per kilo or 55 degrees with an internal thermometer. Just before Pork is finished cooking, crank up oven to 220 degrees to get that crackle extra crunchy.

Step 5. Serve with your favourite apple sauce and Fussy gravy.

How to make an easy casserole the Fussy way!
EASY TO FOLLOW INSTRUCTIONS

"I choose to use a slow cooker but casserole dish in the oven is fine as well."

Step 1. Start by frying some chopped onion, celery, carrot and a couple of chopped garlic cloves in a heavy based pan. When finished put in your slow cooker.

Step 2. Add a nice tomato Sugo and a couple of tins of tomatoes. Add this to your slow cooker and turn on.

Step 3. "Speak to the Fussy Crew about what cut is going to suit your requirements. I prefer chuck steak diced." Season well and fry till brown. Add to slow cooker.

Step 4. Season to taste add a little sugar then watch the slow cooker magic happen. Cook until meat is tender mix in some cornflour to thicken. Feel free to add in a couple handfuls of mushrooms.

How to cook the perfect lamb shanks the Fussy way!
EASY TO FOLLOW INSTRUCTIONS

Step 1. Ask our Fussy crew to cut your shanks to your requirements -  frenched, cracked or split.

Step 2. Rub shanks with a good lug of oil, salt, pepper and brown well.

Step 3. Fine chop carrot, celery, onion and a couple of cloves of garlic. Brown in a good lug of oil.

Step 4. Place shanks and veg together in dutch oven/casserole dish/slow cooker. Add a good tomato sugo, tin of chopped tomatoes, handful of chopped fresh basil, salt, pepper and tablespoon of sugar.

Step 5. Cook for as long as you can on a low heat - they just keep getting better.
